HUMMUs ANyONE?

Nothing like ole' traditional hummus! Yes? Yes!


Store-bought hummus is convenient, but homemade hummus is super easy to make. Tahini, a peanut butter impersonator made from sesame seeds, provides the signature flavor to hummus. Try serving with baby carrots, asparagus, squash, or bell peppers in addition to pita bread.


OLE' TRADITIONAL HUMMUS


INGREDIENTS:

1 medium garlic clove, minced

1 (15-ounce) can chickpeas, rinsed and drained

1/4 cup tahini

2 tablespoons freshly squeezed lemon juice

1/2 teaspoon salt

Pinch of smoked paprika (optional)

Extra-virgin olive oil


DIRECTIONS:

1. Place garlic in a bowl of a food processor; pulse until finely chopped.

Add chickpeas, tahini, lemon juice and salt. Process until mixture forms a smooth paste.

2. Spoon hummus into a deep dish. Sprinkle paprika on top and drizzle with olive oil.


TIP: I used a large garlic clove and it overpowered the hummus. I would suggest

you use a small to medium piece to just give it enough garlicky kick.

I also set aside half the canned chickpea liquid, also known as aquafaba, and blended it with all the ingredients for a smoother consistency.

Total time: 25 minutes

Makes 2 cups
