BUTTER ME Up...MORE!

There's nothing like adding extra flavor to your meals. Why not whip one of these up and store iin your freezer in case of an emergency? Parents coming over? Friends dropping by? There's nothing like a tasty meal when you are quarantined. too...sigh!


CHIPOTLE LIME BUTTER

(used in picture...Frozen butter was cooked with 2 pieces of flounder and placed over a bed of frozen veggies).

INGREDIENTS:

  • 1/2 teaspoon chipotle powder

  • 1 teaspoon lime juice

  • 1 teaspoon finely chopped fresh cilantro

  • 1/8 teaspoon freshly grated zest

  • 1/4 cup butter, softened


DIRECTIONS:

1. Combine all ingredients for desired flavor butter in bowl. Beat at medium speed until well mixed; refrigerate until firm.

2. Stir in an airtight container and refrigerate for up to 2 weeks.


Yield: 1/4 cup Prep: 10 mins

DAIRY STATE BUTTER

INGREDIENTS:

  • 2 tablespoons grated Parmesan cheese

  • 2 tablespoon finely grated Cheddar cheese

  • 1/2 cup butter, softened


DIRECTIONS:

  1. Stir 2 tablespoons grated Parmesan cheese and 2 tablespoons finely grated Cheddar cheese into 1 stick softened butter.

  2. Store in an airtight container and refrigerate for up to 2 weeks.


Yields: 1/2 cup Prep: 10 mins

 

EAST COAST BUTTER

INGREDIENTS:

  • 2 teaspoons Old Bay Seasoning

  • 1 1/2 to 2 teaspoon grated lemon peel

  • 1/2 cup butter, softened


DIRECTIONS:

  1. Stir 2 teaspoons Old Bay Seasoning and 1-1/2 to 2 teaspoon grated lemon peel into 1 stick softened butter.

  2. Store in an airtight container and refrigerate for up to 2 weeks.


Yields: 1/2 cup Prep: 10 mins

 

GARLIC BASIL BUTTER

INGREDIENTS

  • 4 teaspoons minced fresh basil

  • 1 - 1 1/2 teaspoon minced fresh parsley

  • 1/2 teaspoon garlic powder

  • 1/2 cup butter, softened


DIRECTIONS:

  1. Combine butter, basil, parsley and garlic butter.

  2. Beat at medium speed until well mixed

  3. Refrigerate until firm.

  4. Store in an airtight container and refrigerate for up to 2 weeks.


Yields: 1/2 cup Prep: 10 mins

 

CILANTRO-LIME BUTTER

INGREDIENTS

  • 1/4 cup minced fresh cilantro

  • 1 tablespoon lime juice

  • 1 1/2 teaspoon grated lime peel

  • 1/2 cut butter, softened


DIRECTIONS:

  1. Combine butter, cilantro, lime juice, and lime peel.

  2. Beat at medium speed until well mixed.

  3. Refrigerate until firm.

  4. Store in an airtight container and refrigerate for up to 2 weeks.


Yields: 1/2 cup Prep: 10 mins
