Want to switch to a healthier option, use this friendly mayo for any recipe that calls for regular mayo to avoid processed oils, eggs, and dairy.
Ingredients:
1 medium avocado
2 tablespoons cider vinegar
2 tablespoons olive oil
2 1/4 teaspoon lemon juice
1/2 tsp salt
Directions:
1. Cut avocado in half and discard the pit. Scoop avocado flesh from skin and place in a food processor.
2. Add apple cider vinegar, olive oil, lemon juice, and salt. Process for 30 seconds or until smooth.
Storage: Store in an airtight container for up to 3 days or freeze in an ice cube tray for single serving use for up to 3 months.
Variations:
For Garlic Herb Avocado Mayo- add 2 garlic cloves, 2 tablespoons fresh parsley,
2 tablespoons fresh rosemary, and 2 tablespoons of fresh thyme.
For Wasabi Avocado Mayo- add 2 teaspoons wasabi powder and 1 1/2 teaspoon coconut aminos.
For Tartar Sauce Mayo, substitute apple cider vinegar for white wine vinegar and add 1/2 cup chopped dill pickles, 2 tablespoons capers, and 1/4 teaspoon fresh horseradish.
Yield: 1 cup
