This Grilled Cheese Slaps

This is a quick and easy lunch to make. It's flavorful, light, and opens itself to a variety of styles based on the cheese, bread, and dressing you choose.


Ingredients:

  • Bread (I prefer Arnold brand whole grains Oatnut)

  • Cheese of choice (great with gouda, or sharp cheddar), also there is no shame in blending cheeses

  • Butter or olive oil (preferably butter)

  • Green leaf (baby arugula or baby spinach is great)

  • Optional - Honey, or dressing of choice (I love Champagne style vinaigrette, or spicy peanut vinaigrette)

  • Mixed nuts, or nut of choice

Directions: For one grilled cheese...

  1. Turn on the stove to heat up your pan (low heat)

  2. Get your two slices of bread, your cheese, butter, greens, and dressing

  3. Rinse your greens with cold water in a strainer bowl

  4. Separate your slices of cheese from each other in the package (one or two slices depending on your love of cheese). Lay them to the side on a plate

  5. If using butter, spread the butter on one side of each slice. (If using oil, put a drop of oil in the pan and turn stove on)

  6. Place one slice of bread on the pan with the butter side down

  7. Place your slice(s) of cheese on that bread, followed by a few pieces of your leaf of choice

  8. Drizzle some of your dressing over the greens

  9. Place the second slice of bread atop the greens with the buttered side facing up

  10. You can turn the fire up a bit to a medium heat

  11. When the underside bread has browned to your choice flip the sandwich so the other buttered side is on the pan

  12. While this side cooks you can lay out the rest of your greens on a plate, spread some nuts on top, and drizzle dressing

  13. Once the second buttered side browns to your liking you may remove your sandwich
